Tuber Mesentericum is a wild autumn truffle that grows in broadleaf forests, primarily under oak, beech, and hornbeam trees. It is distinguished by its uneven black to dark brown skin and compact interior with clearly defined white veins.

Aroma and taste:
Its aroma is easily recognizable—strong, sharp, and distinctive, with medicinal undertones (sometimes reminiscent of iodine or carbolic acid). In cooking, this makes it unique but requires careful use. It is usually paired with stronger flavors and spices to balance its distinctive aroma.

Season:
Harvested from late September through January.
