Tuber borchii Class B, known as the bianchetto truffle or spring white truffle, is an edible mushroom of the Tuberaceae family. It is less well-known and more affordable than the white truffle Tuber magnatum, but has a similar, albeit milder, aroma.

Key characteristics:

  • Appearance: Smooth outer skin (peridium), ranging in color from light yellow to brown. The interior (globa) is creamy with white or brownish veins.
  • Size: Usually reaches 2–5 cm in diameter.
  • Aroma and taste: The aroma is pungent, reminiscent of garlic and spices, but milder than that of Tuber magnatum.

Habitat and harvesting:

  • It grows in symbiosis with oak, pine, and beech, primarily in sandy and calcareous soils.
  • It is found in Europe, mainly in Italy, and is harvested from January to April.

Culinary uses:

  • It is used grated over pasta, risotto, eggs, or meat dishes. Suitable for flavoring oils and sauces.
